 Hi, new to the forum. Not really new to smoking just upgrading & trying to be more informed.about different methods.I started off with an inexpensive Brinkman Charcoal smoker close to 20 years ago now. I just purchased a Masterbuilt 2 door propane model. It'll be deflowered this weekend.

 My mom wanted me to do the Thanksgiving turkey in the smoker this past TG. And while it came out good I wasn't able to keep the heat up enough to finish it & had to complete tthe cooking in the oven

. The single wall Brinkman just wouldn't retain the heat. That's why I got the propane model. After having read some reviews on a multitude of the more entry level smokers this looked like the ticket.
