Hello again all of you here. Us wonderful band of merry smokers. Quick question for everyone. I have gotten behind on cleaning my smoker (in fact I have never cleaned the inside in the 8 months I have had it) and I was wondering what the best way or even if I should. I have a ton of season on the metal because I have never cleaned it and was wondering, if I clean it, what should I use and will I have to re-cure the metal again before I use it again. I know I should have kept up on it but it doesn't seem to be affecting my finished product at all.

vet, morning....... I run the temp up to 275-300 (max) for several hours.... that seems to "bake" all the grease, and harden it so it will flake off, or at least not add funky flavors to the next smoke....  That is in my MES 30...  Dave
 
Hi Michael, I have a propane also and all I do is wipe out the grease that collects in the bottom with a bunch of paper towels and every few months I will do like Dave said and crank up the temp (empty of course) for a couple of hours. I do take the racks out every time I use them and scrub them in the sink.
