High on the hog ribs and Tennessee honey sauce

Take st Louis spare ribs pull membrane off back trim excess or uneven meat and fat off front of ribs mix 1/3 part salt 1/3 part paprika and 1/3 part black pepper rub generously on both sides smoke 2 hours at 300 with pecan wood spritzing every 30 minutes with half apple juice half apple cider vinegar

Wrap with foil smoke 225 for 2 hours unwrap smoke for additional hour mopping with sauce as needed


Tennessee honey sauce

Take 4 shots jack Daniels Tennessee honey whiskey sauté with 1/3 cup mccormicks grill mates apple wood rub and 1/4 cup brown sugar boil tell thickens add 2 cans 8 ounce tomatoe paste boil tell desired color add 1/3 cup both apple cider vinigar and apple juice cook 10 minutes at medium boil constantly stirring
