Evening folks. It’s a slow night a work so I figured I would post some qview that I brought for the boys Sunday night. I got four 6.5 pound butts injected, rubbed, and wrapped Saturday afternoon. Got up early Sunday morning and got them going. This is the most that I have ever done. I was planning on having them on at 0800 HRs and pulling them at 1700 Hrs. It took a while for the smoker to get to temp and to get TBS but I finally got them on at 0820 Hrs. I started my shift at 1900 so I knew I would be pushing it. Anyhow I used a mixture of lump, pecan, and cherry. I tried to maintain 225-250 had difficulty keeping the temps down. The highest the temp was 270. I opened the lid to let some of the heat out to get the temp down. Im guessing that might have caused them to take longer than I expected. I still haven’t quite mastered fire control however I get the job done.
I foiled them all around 160 and used JJ’s foiling sauce. I threw them in the oven and jacked the temp up to 350. Two got to 195 around 1750 hrs. and the other two got up shortly after. They only rested for 45 minutes before I pulled them. It was good but definitely not my best product. Everyone at work absolutely loved them. Kudos to JJ for the foiling sauce. I did not even bring BBQ sauce with me yet everyone was asking me what kind of BBQ sauce I used. Anyhow here are the pics
