Hey all, My name is James aka Etouffee. I am originally from Ohio but have lived in the South (Texas and Louisiana) my life. I am currently in South Central Louisiana. 

 

This is my first attempt at Smoking anything. I have wanted to do it for a while and someone got me a smoker for Christmas so I guess it's time :)

 

I have a vertical 2 door Brinkman with the spring handles. I didn't seal it up tight like I read that some have but I did get the basket for the bottom which has helped. Doing my first batch today, with some Pork Ribs and a Beef Roast. Not sure if it was good to do them together but figured I would give it a shot. 

 

I have been having a problem getting my temps much over 200 but that is according to the stock gauge which I know can be off by quite a bit. My dad came with his laser gauge and his temps were about 20 degrees higher. 

 

Well that's about it for now. Looks like I have a lot of reading to do!
