Hello and greetings from the UK - where smoking is not so popular and as a result I have little idea what I'm doing!

I smoked about 8 pounds of pork shoulder yesterday with the aim of saving most of it for lunch today when we have friends coming over. So I now need to reheat around 5lbs of pork and wonder what the best way to do this is. Now, I realise this has come up before and I have done a search and read those threads put it seems the standard advice is to pull your pork while it's still hot and then refrigerate it, however I didn't know this yesterday so just wrapped the un-pulled pork in foil and put it in the fridge.

So should I now pull it cold and follow the steps advised elsewhere, or is there a better technique? Not sure if it will 'pull' properly now it's cooled down?

Thanks

Pete

Welcome to the SMF Family Pete...Yes the best way is to pull it hot, but all is not lost. Cut the Pork into 4cm chunks and place them in a Roasting pan with any leftover drippings and 250ml or so of Apple Cider or other liquid you like, Beer works too. Cover and reheat in the Oven at 163*C. The steam will break down the gelatin that set as it cooled and is holding the meat together. It should pull easily once good and hot. I would plan on an hour maybe longer depending on how easily it was pulling before.

Let us know how it came out and how you served it. What kind of Finishing Sauce or BBQ Sauce you used or what ever you did. We are always interested in what our brethren across the Atlantic use. Take a minute and go over to Roll Call and introduce yourself. Tell us about your experience, type of equipment and anything else you wish to share...JJ

Thanks JJ - much appreciated!

The reheating went pretty well thanks - it wasn't quite as moist as would be ideal, but then it wasn't when it came out of the smoker either. It wasn't dry at all, but didn't quite fall apart as it did when I'd done it in the oven previously. Still lots to learn though!

I'll head on over to Roll Call now - thanks for the welcome :)
