Hi, long time lurker, first time poster. I am smoking a prime rib for tonight. Do y'all think red oak would work ok? I thought I had some hickory and turns out I am out. TIA
Oak should work just fine. Tell us more about your process, what kind of smoker are you using?

Ok, I just checked in at Roll Call.
I don't have smoker....I am going rather primitive. I have a barrel shaped BBQ. I am soaking some red oak and hickory (found some) and regular charcoal is lit and getting ready. I have a 3 bone roast (5.8#) seasoned with Pasolivo BBQ Seasoning and kosher salt resting on the counter. Charcoal and soaked wood on one side of the BBQ and meat/drip tray on the other side. I will smoke at 225-230 until about 125-130 internal temp. I will post pics as I go. Thanks y'all!!
