New Years Fattie! FINISHED PICS!

I thought I would toss a fattie on the MES for some guests coming for a new years eve get together,  I decided to go with a Mushroom, onion cheeseburger fattie!!


I mixed up 1lb of lean ground beef with salt, pepper, a little dehydrated garlic, BBQ sauce, and a handful of panko bread crumbs.  I flattened it out in a ziplock then put in the fridge overnight.


I sauteed three large onions in butter and deglazed with a little white wine (a few for the pulled pork pizza) and a tin of canned mushrooms.  I also cut a few large sticks of cheese hoping it will stay together a bit better then grated cheese,  I rolled it up before I got a pic so I unrolled it and snapped a quick one!


I made my bacon weave on two sheets of wax paper then rolled it as thin as I could with a rolling pin.  I want to try and keep this fattie thin so I can slice and serve on small butterpan buns.  Then it will be a little more like an appetizer, fattie sliders.


Here it is all rolled up and ready to go.  I won't be tossing this on until 4 or 5.  I am planning to smoke this with Pecan!!  It is my new favorite wood!!!  Thanks for looking, hopefully I can get a few pictures before everyone digs in!!

Hate to say but after prepping all kinds of food for a New Years get together I came down with a flu about 8pm and spent the rest of the night with my head in the toilet!!

Brutal!!  The good news is my brother was nice enough to grab a few shots of the fattie before the crew devoured it!  They all raved about it and even tossed a piece in the freezer for me once I get over the flu.  Here it is after about 3 hours of smoke!


Before I tossed it on I dusted it with FIORELLA'S JACK STACK BARBECUE "KC STEAK RUB" that my brother inlaw picked up on a recent trip to Kansas City.

Gotta do some of these.  Looks great.  Tummy flu going around here big time.  Hope you are better soon!
