Hello everyone, I am from Austin TX., am new the forums as of today but have been smokin’ for 15+ years. I have been lurking for some time and have enjoyed many of the conversations; thus I finally decided to join and participate in the discussions. I have pretty much smoked anything edible that I can find at least a couple of times (i.e. I don’t recommend smoking plain broccoli but do chocolate covered broccoli), and specialize in Brisket. I use a small offset pit made of ½ and ¼ inch plate and am looking to build a trailer this coming year. My wood preferences in order of use are Pecan, Oak/Pecan, Mesquite/Oak blends and when I can find it Apple or Cherry for a change in pace. As this is just an addiction and not a hobby I tend to smoke at least 3 briskets and whatever else is close at hand a month. Which in turn has led my friends to visit for freezer raids more often than not; this in turn makes my wife happy and clears some room out of the freezer for more goodies.
