Ok SMF'rs, I am working on my largest butt to date (literally too, can you say Holidyas!). I am expecting the smoke to take anywhere from 12-17hrs, but who knows, when it's done.......... It's done :drool

The beginning ....one big a$$ butt

All rubbed up and massaged in. The base of the dry rub is brown sugar and fine dark roast coffee with many additional spices to accompany the Sweet earthy flavor that I am shooting for.

In it goes and the temp is looking pretty good

I am into hour 13 and I believe I am in a stall as the internal temp is near 180. The bone has pulled away and it looks done. I have used three different thermometers and each have provided similar results. I'm going to let it go.....making me crazy though ....but I'm going to hold out for a whee bit longer

As promised here is the finished butt... I ended up taking it out at 9am (about 15-16hr smoke) it was falling falling apart as I was removing it from the smoker. I wrapped it in foil and let it rest for about an hour before pulling...

Looks good from here!! It's done when it's done, so try to remain patient. As for the internal temp, make sure you're checking in several different spots in the meat. There can be fat pockets and other things that can give a false reading. Good luck!
