Hey from Delaware,

My wife gave me a MES 40 gen2 for christmas. I have never smoked anything, and I was wondering if you guys could give me some direction. Is there a book, or some good articles for the stupid newbies? I am very excited about this gift because it is something that I have wanted to get into for a while.

From what I have found so far on this forum it looks like tomorrow will be a day of cleaning the smoker, running it empty for a few hours, and then oiling the inside and running it for a few more hours. This is all I know at the moment.

Thanks for all of your help, and I look foward to getting into this site more.

Hulk, morning and welcome to the forum.....  About the smoker, after cleaning and oiling with veggie oil and heating again, with the smoker warm, add about 1/4 cup of dry chips to the chip chute and dump them... wait until the smoke stops, about 45 min, and repeat... 

Some have found the MES will not generate smoke at temps less than 180 degrees.... I don't know about the 2nd gen smoker.... 

Throw in some food and go for it....  I recommend 1/4 cup, or less, at a time about every 45 min or so.... Too much smoke is bitter...  

There is a learning curve with every smoker.... enjoy smoking and eating the test hunks of meat....  Any questions as your learning curve progresses, our members know everything....  they are great and willing to help....   Dave
