The wings-
Rinsed and padded dry with paper towel.
Then placed in large ziplock bag and coated lightly with olive oil.
Added brown sugar, garlic powder, onion powder & paprika to bag to coat.
Add to smoker set around 290.
Smoked for about 4 hours or so with apple in uds.
Added a garlic / Parmesan cheese sauce.

The Turkey-
10 pound turkey.
Brined for about 12 hours.
Rubbed turkey with oil.
Added brown sugar, garlic powder, onion powder, salt & pepper.
Packed inside with carrots, apples, onions
Pan on rack below turkey. Apple juice, cranberry juice, turkey broth(or chicken), apples, carrots, onions neck and parts.
Smoker set to around 290.
Placed bird on top rack of uds and pan on bottom rack of uds.
Smoked with apple till proper int temp.
Let rest for 30 min or so.
 
Thanks for the update. Just need to add a Caution for guys that can't get that high a smoker temp...It is perfectly fine to smoke Turkeys at lower temps...BUT...ONLY add a few loosely placed fruits and/or vegetables in the birds cavity. Packing too full can increase cook time, and leads to dry meat waiting for the Fruit to reach 165*F even if not going to be eaten...JJ
