I've been visiting here for over a year and decided it was time to join up and say hi to everyone.

I love the site and and the info that you all share.

Tonight I smoked (pecan) 2 Cornish Hens and a Sweet Potato Casserole and I'm a happy person :)

I'm going to beat everyone to this and say "We are going to need a recipe for that casserole"!!!
 
I'm always glad to share

You may have some improvements on it but here we go

approx 9x11 baking dish

3-4 lbs of sweet potato

1/4 stick of butter softened

4oz of chopped pecans

2 eggs (raw)

1tbsp ground cinnamon

1tsp ground nutmeg

1/4 cup brown sugar

1/4 cup white sugar

1tsp vanilla

16oz bag of small marsh mellows

Start with boiling your sweet potatoes until fork soft (I left the skin on) and it took me about 35 minutes.

once they are done I dumped out the hot water and filled the pot with cold water to cool them down.

Next I removed the skins and put the hearts in a mixing bowl.

Now add vanilla, butter, sugars, cinnamon and nutmeg mixing as you add...this is your last chance to adjust the flavor befor the raw eggs!

If your happy with the taste you can add the eggs and mix it till as smooth as you like..I prefer a few little chunks in mine..if it seems a little to runny you can add a few spoons of flour to thicken it up some.

Dump your mixture into your baking dish and spread it around until its a fairly even thickness and sprinkle the pecans on top of it.

Spread the marsh mellows over the top nice and thick.

Put it in the oven on the lowest rack preheated to 375 for about 45 or until the marsh mellows are a nice golden brown.

After it cools its ready to eat but if you want the real good stuff its time to put it in the smoker for about 2 hours on the top rack at 250 degrees

I used pecan and was happy with the flavor

Nice color on those hen. I'm thinking that if you pour that sweet potato mixture into a couple of pie shells, you would have some awesome sweet potato pie! Thanks for sharing the recipe.
 
Welcome from chilly Tulsa!  Thought about firing up the ole Hasty Bake but I see that the snow flakes are falling now. Think I'll just stay in and eat leftovers!
