I'm from Austin, TX and I have an offset smoker, it's the Oklahoma Joe's Longhorn Offset Smoker by Char Broil by CharBroil  

I've been doing Brisket for a few years and recently did a roaster pig.

I'm still experimenting with the best way to measure temperature. I've heard that you can't trust the built in thermometer but I don't want to be opening the door all the time. 

Also, still trying to figure out the best way to maintain the fire.
