Buckboard bacon question

[h3]    I boned out 4 pork shoulders and cured them. When I got them out of their night in the fridge after seasoning them, I put them in my MES 40. But it wouldn't heat up. [/h3][h3] [/h3][h3]    My question is can I freeze them till I get the smoker fixed. JC,morning.... Try applying heat to the 2 sensors in the MES....  Use a hair dryer or small electric portable heater to warm the inside of the  smoker....  MES has a low temp cut out of some sorts that disables the heating element....  Trick it into thinking the smoker is warm......

I'm pretty sure you can freeze it but call there # and ask.1-800-829-2285 (customer service) if it's there product you used.

JC, Cured meat can sit at room temp for awhile, no problem.... refer and/or freeze as soon as possible if you ain't cooking it...  it will be good.... with the salt in it, the freeze point of the meat will be lowered.... just so you know, it may not get "rock hard" like no salt meat...

As usual, I am with Dave.

This was why you cured the meat in the first place.  (assuming it was done correctly)

Unless it was at higher temps for extremely long periods of time, it should be fine.  Freezing won't hurt it.
