I live in Arkansas, I cooked fine dining while working through college I have a good background in cooking but zero in smoking. I got a triton gas grill with smoker box for Christmas. I know it's not a great smoker, but it will do until I get a better grasp on what I wanna do.

Does anyone have any tips to maintain a constant temp with a cheaper smoker?

Looking forward to good conversation, any tips will be appreciated.

I like to cook brisket, prime rib, and ribs
