Our kids and their families are coming over tomorrow for a Christmas Eve get together potluck.  Our contribution will be pulled pork sliders.  Since my last project with pork butt took nearly 18 hours, I'm going to get started this evening just before the Seahawk-49ers game starts (go hawks!). 

This morning I got everything ready and seasoned the butts which are now in fridge waiting for the smoke.


I got a good price at Safeway.




Plenty here for the dinner tomorrow and extra to send home.  I'll add more photos as I get started.
 
Those shoulders look as good as the Hawks looked last night.... The shoulders will be on a roll just like the Hawks are.....

Well it looks like the butts reached 200 earlier than I planned, so they will be resting in a cooler full of towels. 

Question, how long is safe to stay that way?

Question, how long is safe to stay that way?

Keep them warm... above 140 ish....  Depends on how well insulated and wrapped.... Some have noted 5-6 hours is not a problem.....  Dave
