hello, my name is james im from iowa i use a weber grill and do indirect smoking on it and i also have a smokey mountain xl i use for sausage and turkeys and my briskets. im currently working on a smoker if i ever get started on it i want to build a vertical with 2-3 racks out of a 55 gallon drum with a 10 gallon air tank under it for fire box just havent gotten around to it yet i posted up my summer sausage reciepe yesterday....i injected my first turkey this year for thanksgiving 22lb and wow it turned out awsome i bought a maverick with the 2 probe and that honestly makes a huge difference. when controling the smoker heat..
