Hello, We live in the northeast Ozark Plateau close to a village called Caledonia, Mo..we are both retired now and have reduced our land to 48 acres,

Bought a masterbuilt digital electric smoker, after they replaced the body and then the temp controller i am able to use it, lesson learned, but have cured and smoked chicken, pork loins and venison on it, something we really enjoy. we are basically self suffiecient, but no longer have any livestock, now we barter for most, .

Our next project is to cure and smoke sausage for longer storage, so we'll start on a batch of venison/ beef/ pork summer sausage and smoke it mostly dry,

I do have an old railroad signal box i saved before the scrap yard that i will work on for a large volume smoker and i need to work on cold smoking our cheeses.
