been looking around and just too many threads to follow all the recipes. saw the technique for rolling but not sure on the cooking process.
 
I would smoke it around 225-250* & take it to an IT of about 165* as it will probably rise a little once you pull it... As far as recipes there are TONS of them as you can put pretty much whatever you like in a fatty

 If you have a preference for the style of fatty you would like to try it would be much easier to suggest some recipes...
