First attempt at ribs AMNPS & MES

     Finally gonna try my first ribs on the MES 30. I just put them on at 6. I am going to use the 3-2-1 method & the AMNPS. I'm trying out some oak pellets this time. I haven't smoked anything with oak yet so I figured I'd give it a try. I didn't have my camera handy when I was blundering around this morning but pics are definitely coming as time goes on...

   EDIT:  I may throw some more salt on as well & probably a couple potatoes & hopefully I will be able to end up with a tasty lunch - wish me luck! Updates to follow...

Love some ribs...... I use oak for most of my cooks. It is what we have on the property and we save the branches we trim. I do find it is diffrent than the oak I get at comercially....

You may need to keep an eye on the salt in the MES with the ribs. The moisture may cause an issue with that.

Ok thanks I will monitor it. I will take a pic as well - gonna put the taters in soon...
 
Ok the ribs got done & I took them out. They were great! I am well satisfied with how they turned out! I used Chef Jimmy's foiling juice & have to give it my approval as well - thanks!

Almost forgot the taters - they were good too

     Well I consider my first rib attempt a success & I will be making them again for sure! I also didn't run into any troubles with moisture & the salt. I kept an eye on it just in case. I left it in to keep smoking for a while longer. Once it's done I will let the smoker cool down & then throw in some cheese...

That looks just FANTASTIC and that finishing sauce is the ticket you used from Chef JimmyJ... I smoked several pork butts last weekend, chopped and finished them with that sauce, just amazing...

I am loving my AMNPS too. After 9 1/2 hours of smoke in my setup I still had over a row of pellets left - pretty efficient!

     Thanks SQWIB! I couldn't be happier with how my first ribs turned out. They were nice & tender but not fall off the bone mushy - you still had to pull a wee bit to bite it off the bones - Perfect to me!

     As far as the AMNPS goes I am really pleased with how it works in that configuration - really glad I decided to try the disposable roasting pan out...
