Good afternoon Smokers, my name is Dr. Tom and I am from the north side of Houston, Texas.  Been reading this website for years and finally signed up.  I use an original Klouse smoker made here in Houston.  Smoked everything that has four legs  and / or wings.   Looking forward to Christmas when I have a large packer (Brisket) that will get creole butter injected,  rubbed down and low and slow with oak and hickory.  
 
Welcome aboard, Doc.  I'm put out the "stop by and say hello" smoke signal to my neighbors about twice a month down here in League City.  Pretty close to a restaurant called T-Bone Tom's by the way.

I noticed you cook 4-Legged and Winged , Fowl. Please send me some as I love them Drummies and Wings/Hot sauce. I didn't know the Guys at A&M were Experimenting with Chickens again...
