Well I also have been getting a lot of help from this site over the past year. I am located in North Florida and enjoy smoking meat on the weekends as often as it is possible, I normally use a Weber 27 inch grill I have learned volumes on indirect cooking and temp control. I do have a smoker that I built years ago it is made of a piece of 16" pipe I made it with a fire box on the side a flame deflector and a propane ignition source to get the wood started. I have for a long time used oak and pecan wood, I had a friend bring some wood from a pear tree he took down for me to try and WOW! I fell in love with the molder flavor. Recently my son in law brought me a 6 x 6 ft rail road signal case I plan to make a smoke house with it I just need to decide how to do it do I want to make it a hot cold or both and what to use for a heat source. I will need to do some research and this seems like a good place to find some help.
