Hello,

I've been reading these forums on and off for a year or two and figured now was a good time to post!

Smoked occasionally over the last few years on all sorts of smokers, but nothing serious.  Picked up an AMNPS a couple of months ago and loved it in the grill and for cold smoking.  Wife just bought me a MES 40, not sure which model(hasn't arrived yet) for the anniversary so I figured I should get a little more serious with this and register.  I think she wants more smoked food and who am I to say no?).

I plan on doing some more cold smokes soon, probably a bacon and perhaps a lox.  I've done a lot of cheese, nuts, salt, pepper, butter, and sun dried tomatoes(mm!). Ah yes, and a few batches of buckboard bacon using Pop's brine. I enjoy making sausages as well and will be doing a lot more now that I have the means to smoke them properly.

Thanks for all the advice and recipes I've already experimented with - I am looking forward to a lot more!

Welcome to SMF. I was born and raised in MD. Lived there for 27yrs then moved.

I am in Baltimore County currently but planning a move soon depending on my and the wife's job changes.  Probably to AA Co.
