Ten days ago I picked up some boneless short ribs from Costco ... I've been wanting to try making pastrami from short ribs so here was my chance ...into the the brine it went and today after a water bath , and a coating of pepper , onto the smoker for 6 hrs ... I have to say this the most tender ,flavorful pastrami I've eaten or made ... And color is something else !!!!


 
That is really Red! What was the final IT?...JJ
 
Chef jimmy ... Never took its internal temp ... Could tell by feel it was done ... It ran a solid 6 hours at about 239 degrees on a cherry smoke... And what's nice , these are trimmed lean ...
 
Great looking strami!  And those are some great looking short ribs!

I have been wanting to try a strami from a silverside roast.  I understand that roast is preferred by the Aussies for their corned beef.

Maybe one of these days?
