Received my AMNPS kit the other day - couldn't wait to try it out. Also had been reading a lot here about Canadian Bacon - couldn't wait to try that either. Decided to try both on Sunday. Here is the AMNPS working as designed and better, as claimed.
It smoked nicely for several hours. I tried to get maximum efficiency by smoking some corned beef to make pastrami, some pork loin for Canadian Bacon, a turkey breast and some legs - about all my grill will hold. I kept the temp between 200 and 220 for most of the smoke. Pulled the Canadian Bacon at 145, the pastrami at 180. Here is the grill loaded.
Then my wife decided we should add some homegrown peppers.
Finally, the finished Canadian Bacon!
It is excellent! Really appreciate everyone's posts and ideas.
