G'day from the land down under. I am interested in smoking some rib eye steaks the slow way, basically without cooking it too much and then char-grilling it on a very hot charcoal fire. Does anybody have any recommendations as to what a good temperature would be to slow smoke? Any other tips are welcome.
 
cold smoking would be one way,   you need a very low temp,  there's some smoke generators that provide almost no heat at all,  if you cant get a temp below 150 you may need to use a brine cure for safety reasons.
