I have been smoking fish and meat for about 3 years now. Started with a charcoal hot smoker and then built a coldsmoker from a fridge. Have had some very satifying results from both. I source all my own meat from Fishing and Hunting, I cull deer as part of my job and shoot up to 200 deer a year, mostly females and calves. I fish for trout, salmon, bass, mackeral and all the cod species.

I love the flavour of smoked food and i hope to learn more about it from the community here.

Welcome to SMF glad to have you with us...That must be one heck of a job getting to shoot 200 deer a year and what do u do with all of that meat ?
 
It was a dream job for a lad like me, but after 13 years and shooting thousands of deer the novelty wears off. It's culling and it's different to hunting, it's totally a numbers game and it is really hard work.

I still love to hunt for fun though and travel around looking for new challenges and trophies.

The deer we cull go to a gamedealer and the proceeds from this go to the government. Thankfully there is no value on deer calves over here, so i get to keep a few of them, it's the best meat. Chefs continue to seek out large cuts which usually come from stags and large females, they ignore the young tender animals which is great for me but not so good for the promotion of venison.
