What everyone is having for xmas that might be smoked.....Im thinking about doing prime rib. I been thinking about doing some smoke nuts this weekend for gifts. Already did some cheese and is waiting next week to try it.
 
Bliss, morning...  Around here, Christmas is sacred as are all holidays..... Same menu every year for the last 25.... Well, maybe a small addition of scallops or lobster or 8 count prawns type thing... stuff that is never on the dinner table at any other time of the year......  a special treat that only happens that day.... Trying to change now would be instant hospital stay for who knows how long....   

And there is nothing smoked as of yet.... maybe some day, but I will have to wait for Bride to ask for that change....

Same in our family's holiday dinner. Tradition reigns absolute....Always the same, prime rib, sweet rice stuffing,yams, and cheese cake.

Every couple of months I whip up a batch of smoked trout dip, which everyone loves. This get's them craving that smoked food.Tradition is king for my family as well, but I have a plan. Did 2 turkeys on Thanksgiving, one traditional and one pieced and smoked. Most loved the smoked as much as the traditional bird, so there's the first move on the holiday menu. Doing holiday goodie baskets this year for the first time, every item will be smoked. Currently have some cheese and will be doing smoked trout dip and maybe some smoked salmon. There is the second move. So I figure if I keep adding smoked items throughout the year and adding smoked items to the holiday menu eventually I can convert most of the family to wanting smoked fare for holiday gatherings.... we'll see. There are a few dishes though that I even would pitch a fit over if they were not included in the holiday meal, so I can only take this so far. Either way, most important part is that we are all together, all healthy and all happy (as you can be with extended family over the holidays). Family comes first always, great food is just icing on the cake IMHO.
 
I think some smoked nuts would be a great addition. They will just sit there and as people eat them youll get asked where you got them.Of course youll say I smoked those just for today. Trap set. then you start talking how you saw a thread on a smoked prime rib that looked absolutely delicouse and hope someone else brings up doing one for a family dinner for a holiday.
