Hi, my name is Mike. I manage a bed & breakfast in Colesberg, Republic of South Africa. I am a newbie to smoking but as we have no shortage of venison & catfish I thought it a good idea to try. I am using a box smoker with methylated spirits as a heat source. I am going to give warthog sausage a bash.

The pig was good, the catfish was great! A lady who saw the catfish (uncleaned) had a mantra "please don't tell me this is "barbel" (South African name for catfish) whilst chowing down big time. Dill, lemon juice, garlic, ginger & mint (yes, mint!) together with smoke is NUMBER ONE!
