Burbs of NY
Hey all,  saw that the temp in the NY/CT area for Sunday was going to be around 55/60 degrees.  Figured I would smoke some baby backs for after football was done.   Started out with 3 racks sliced in half (purely for ease of handling).  Used Jeff's rub and let them sit for 24 hours. 


Sunday afternoon got the WSM going and put the BBs on for a low and slow smoke of lump charcoal and apple wood....  Had a running temp of 220 to 225

Ran about 2 hours and then put them in foil for an hour and a half.  Removed the foil and gave them another hour on the grate before removing and letting them rest. Should have put in a spritz when in the foil. The smaller ribs were a bit dry.  Served Jeff's sauce warmed up and on the side for dipping.  My wife made roasted garlic mashed red potatoes and cole slaw.  


No did not use the hot sauce  Just got into the pic by accident   lol


I must say, that when you get the WSM going, and you get the temp locked in, there is not much messing with it until it needs water or fuel....  That is about 5 hours into a smoke...   gotta love a Weber.   Hope you have enjoyed my little Sunday project.   Rick
