Smoked steak with the fixings

Had a day yesterday when I really didn't feel like doing much, started out planning to do something creative for lunch and it turned into more a full blown dinner. Sorry for poor pics.

All good things start with bacon. Last slab of my hickory/maple from this summer.

Tbone seasoned with garlic and honey. Went into a 275 degree smoker w hickory/cherry blend and an onion cored and stuffed with herb/seasoned butter.

Garlic herb bannock cooked in the bacon grease (unnecessary but I would have been remiss to bake it with that calling to me)

I let the pintos cool off so they got thick, but after the pic added Cholula to kick it up/thin it out again.

I also made green beans with bacon/onion but didn't bother with pics of those, tasty though!
 
Did you fill the onion with something or is it just that translucent? It looks like a nice little bowl on your picture.

I cored the onion out and filled it with herb/seasoned butter, put it on a foil ring and tossed it in the smoker.
