3-2-1 method with 2 rows of the AMNPS filled with hickory. I have been using a vertical propane and occasionally a side firebox. This is my first time using an electric smoker and also the AMNPS. I have a lot to learn about using it and finding the right combinations. The ribs were tasty and I think the next batch I will try 2-2-1 as the seemed a little overdone. So on to the views.
Ribs before an overnight rub rest, backing removed, cleaned and dried.
Rubbed with a concoction that took a year to perfect (the wife had to like it) and vacuum sealed.
This morning pulled from the fridge and dusted again with rub.
Heated up the MES to 225 deg and setup the AMNPS with 2 rows of hickory. Microwaved the pellets for 60 seconds. Chip draw out 2 inches and chip loader out 1.5 inches. Top vent wide open. ( I have been reading a lot lately )
The AMNPS set in place with a tent of foil supported by wire. Not sure I needed it but from what I have read it cant hurt. The design of the new 2012 MES has a full drip pan that protects the chip/heater section and the water tray slides in so no dripping actually got to the foil. BTW-no water used.
In they go for 6 hours using the 3-2-1 method.
