I may be a new member to the forum, but I have lurked here for years. I've used many of the recipes, techniques, spices, etc from everyone. My first attempt at Canadian Bacon I used Bear's with great success. So this year when I decided I'd delve into the realm of sausage I read hundreds of threads and thousands of posts and decided that I wanted to try  the "skinless" approach. Mainly because I didn't have a stuffer at the time (that's been resolved).  So of course up popped Bear's recipe!

I wanted to add it to our Christmas crates to go along with the Cheesus and smoked fishes we have done. Then I heard the news, saddened for sure, and I knew that I had to get this done and in the crate. So I hope someone can get a computer in there for Bear to see the results. the pepperoni turned out fantastic, and I'm surprised it made it to the vacuum packer! So here's the final results!

I didn't take any pictures of the raw mixture, I'm sure everyone's seen that.

It really is great tasting!!! I plan on making another batch, for ourselves in a week or so. Going to be adding some of our smoked Hatch Chiles, we like stuff HOT. Taking baby steps as I jump into the world of sausage making and Bearcarver's recipe is a great starting point!

Bear- Glad to see you back up on the forum! I spent many years lurking and following your directions prior to joining SMF. We've really enjoyed a bunch of recipes. My boys were just asking to make some more caseless pepperoni and snack sticks! Thy're a big hit around our house! Thanks!

Sorry it took me so long, but I still can't get to my main computer. So far I've been using this little "Net-Book" that a bunch of guys sent me.

I'll try to show up more, but I still have a few problems, including problems breathing, screwed up BP, and my right leg is messed up.

I need an MRI to find out what's causing the problem with my leg, but I'm having trouble finding out what kind of metal is in my left ankle ( a bar & 6 screws from 12 years ago). Depending on what metal it is, they can't give me an MRI. They also want to give me an MRA or a Catscan, but they're deciding which dye is more harmful to my kidneys (Catscan dye or MRA dye). They want to see how bad my descending Aorta is, and we want to know why the BP in my left arm is always 30 to 60 points higher than the BP in my right arm.

So for now I'll be here on a hit & run basis.
