The last batch was so good that it is almost gone. This batch is smokey jalapeño. Cold smoked some japs with oak pellets in the AMNPS for a couple hours. Tasted a slice of one of the peppers and this should turn out great. I'll keep the thread updated as it progresses.

I got to tell you, I think this is going to be a great batch. It smells good already. It's been a week so its time to top it off with vinegar.

You can see the liquid from the fermentation, it is where wide mouth is written on the jar.


Topped with vinegar and back on the counter for another week.

 
Turned out great. Nice light smokey flavor and quite a bit of heat. Added about six cloves of garlic to it also.
