Just took this bad boy out of my MES 30.

I bribed it for 24 hours using some brown sugar, onion powder, garlic powder, kosher salt, and Tony's Cajun seasoning.

Then injected with some creole butter and rubbed more Cajun seasoning on.

Put into my MES 30 at 275 until it reached 165 IT all around. I smoked using apple wood.

I took a bite from the bottom of the breast and I must say it is VERY juicy and delicious.

I think the brining does help with juiciness. I smoked my first turkey on Thursday, and also found it to be very juicy, even the breast meat. I brined that one, too, so maybe that's one of the secrets.
