Sorry for the lack of pics. My son left the camera in his lawn chair last night...it rained. Next time I wont be so cheap and I'll buy a memory card instead of storing the pics on the camera.
Any who.. I did a few mods on the ECB (file cabinet with racks and heat proof paint in my book) I landed a nice stainless wok at the local Fred Meyers and bought some self tapping sheet metal screws. I went by the farm and ranch supply store and picked up a BGE large felt gasket for...$4.99! If they would have had more, I'd have bought them all and offered y'all some killer deals. Pass on the savings, right? I need to buy some heat proof sticky stuff because the gaskets didn't stick too well, but that's next pay day. The self tapping screws were to screw down the leaky top cap on the unit. It leaked so bad the first 3 smokes that the soot ran down the sides from under the cap. Hey, you get what you pay for and anything built can always be built better.
OK. On to the turkey. I fired up a chimney with some blue kingsford and let it get hot. Poured them in the basket and watched the gauge climb (not the junk decoration that comes on the unit, but a real one that I can calibrate). It maintained 225*-250* with no trouble. Water pan needed refilling about every hour and a half. I threw in 6 boneless skinless breasts and 6 drumsticks. I noticed straight away this thing was going to do well. About 5.5 hrs later, it was ready to eat. There's something about smoked turkey...Oh yeah. It's the only way I can get it down.
I also fired up a couple of DO's. One had the stuffing and the other had an apple cobbler. I can't wait 'till next weekend. I don't know what I'll be smoking, but I'll be smoking something for sure.
