Smoked Prime Rib Roast

My BIL and his family decided not to show up for Thanksgiving, so I decided to smoke a "Prime Rib Roast" for dinner.

At $8/lb. I'm not feeding his crew of 6!

I covered the rib roast will a little oil, little garlic and a nice coating of Montreal Steak Seasoning

Heavy smoke for first 2 hours

The leftovers are gonna make GREAT "Prime Rib Sandwiches"!!!!

14 lb. Rib Roast I cut about 8 lbs. for Thanksgiving dinner.  The other roast I'll save for Christmas dinner

   

Covered the entire Rib Roast with oil, garlic and Montreal Steak Seasoning


2 hours of heavy smoke on my pellet grill @ 180°

Placed a foil pan under to catch any drippings and upped the temp to 225° for another hour

Final hour raised the temp to 275°

Pulled @ internal temp of 135°


Rested for about 20 minutes before carving


Very nice medium rare in the middle


Waiting for the family to dig in

Todd, it is great just gently warmed in Au Jus and served with eggs, hash browns and toast!
