Thought about using the drippings, and juice from my smoked turkey to make gravy.  I am smoking with hickory and jack daniel wood chips. Any thoughts smoking at 225-235.

Why not use the drippings? Besides you just can't get that Thanksgiving Turkey Gravy taste any other way unless you reserved the Neck, Heart and Gizzard, roasted them separately with some veggies and then made a broth and Gravy from that...JJ
