Hey all, I just joined SMF after reading tons and tons of threads. I love all of the info found on here. Anyways, I have a Bar-B-Chef offset smoker and its the one with the smokestack already down to the cooking grates and the other pre-done "mods". I've read a lot of stuff about tuning plates and baffles to stabilize the temp within my smoking area. My question to you all is has anyone just tried to wrap the charcoal grates that come with the smoker in heavy duty aluminum foil and used them as make shift tuning plates??? Any thoughts/ concerns/comments/personal experiences with this method will be much appreciated. I'm soo glad to be a part of this community now and I will be very active.

The problem with your idea is the charcoal grate sits to low in the cooking chamber. The tuning plates should be position above the opening of the fire box in the cooking chamber.
