Hello from SE Arizona.

I am a retired Army SFC and enjoying still working around young soldiers.

I am a "Baby Boomer" and enjoy my elec smoker and my grill and my DO toys.

I have successfully smoked several turkeys in the past but never have smoked one with breast side down.

I am camping this holiday and taking my elec smoker with me,  thinking of smoking this bird breast side down to gain the juices from the fat from the back.

Any thoughts on this or "go with what I know" type thing?

Love my MES!  I have smoked salmon, turkey, turkey legs and chicken in the bugger.  Always trying different seasonings for the yardbirds.  haha

As for the turkey, I'd say "go with what you know". I've never really seen any benefit from inverted cooking for poultry. In fact, in my experience, it leads to drier breast meat as the heat source is usually below the bird, putting the breast closest to the heat.  What will make a huge difference is either brining or salting, and drying the skin for 12-24 hours in the fridge. That may not be an option if you're camping, unless you have an RV with a fridge.
