I just recently upgraded smokers from a bullet type electric smoker to a MES 40.  So now that I have more room I am ready to try adding beans into the mix.

I have the beans recipe, pans, etc. ready.  And plan to smoke the brisket around 225-240.  It is a 10+ lbs packer so I figure it will cook between 10 and 15 hours.  So here come the questions:

1) How long should the beans be cooked in the smoker?

2) Seems like the beans should be under the brisket during the start of the smoke to get the most extra flavor from the brisket... but if they don't cook the whole time with the brisket how is this handled?

3) Should they be cooked some covered as well as uncovered?

Other suggestions for the beans?

Thanks,

Greg

Does anyone smoke the beans the whole time?  For me, I will be cooking a full 13 lbs brisket... So 13 hours on the beans??

My thoughts are to have them under the brisket at the start... then when I foil the brisket (+- 3 hrs later) take them off for a while.  Then a couple of hours prior to the brisket being done put them back on the smoker (w/o smoke) to heat them back up...

Thoughts on time for cooking?

I would think 13hrs too much and beans become mushy (if out of can) now out of bag you may want to soak them for awhile before you put them in like overnight then rinse and put them in??
