Got two 2.8 pound chunks of bottom round the other day at Winn Dixie at bogo price...nice... 2.60 per pound..
Cut off the fat and silver skin and then cut them in half and into the freezer for a while..
Rolled out the trusty Berkel and sliced it all in about 10 minutes..took 45 minutes to clean it afterwards...
Into the marinade for the nite..using this recipe with #1 and some other stuff to get the heat up.....flaked pepper,extra garlic...(thanks Dave)..,sesame oil...

Tried using all three of my devies today.. the dehydrator,MES and the oven..
Used just a little bit of mesquite in the mes..
The oven ones were done first...oven low temp is 170 so I cracked the door open...
The mes was next...very good...took the meat outa the dehydrator and finished in the mes.
Ended up with 2.3 pounds of great jerky...
