First Smoke on my MES

Today, I have started my first smoke on my MES 30. I am using apple wood chips for this smoke. I started out the smoke by preheating the MES to 240, then I dropped the temp to 230.  Now, about 2  hours in and I have just sprayed the butt with an apple juice/rum mixture.  I applied a rub last night and vacuum sealed the bag (as my plastic wrap was giving me a fit).  Here is a picture:

There are updated pictures in the first post. 

Lessons' learned on this first smoke:
  • I need to work on my rub.  It was good, but could have been a little sweeter (with a small amount of heat).
  • The rum/apple juice spray is very good.
  • Start earlier with the smoke, as stated elsewhere in the forum, "the meat is done when it is done!"
Next up, Pork Ribs this Sunday or Monday.
