While at work the other day one of my vacationing employees called my cell and told me to meet him in the parking lot...he had shot an 8 pointer and a doe (black powder season in VA).
He brought me a shoulder from the doe and a hind quarter from the buck.
I took the meat home and wrapped and froze the hind quarter but cut the shoulder from the bone. I am not much of a butcher, but I did what I could.
I seasoned the meat with some of Jeff's rub, pounded out a few strips and wrapped them around some ABTs then a slice of bacon around that. Some pieces just got the bacon treatment and the one large piece got a bacon wrap and then on to the MES with the AMNS and a load of Pitmaster's Choice dust.
Here they are coming off a couple hours later...
The ABTs were awesome, and unlike last time I made them had some awesome heat!!!!
I knew Steph would not eat the venison, so being the awesome husband that I am I defrosted some chicken breasts, wrapped them in bacon and sprinkled them with a rub I learned from the proprietor of a B&B in the mountains of VA that consisted of corn meal, brown sugar, nutmeg, cinnamon, and fresh ground black pepper. She loved them.
