I got a wood fired smoker with the side box and tried to smoke jerky in it yesterday, the jerky closest to the fire box got burned real fast  so i started every hour rotating the meat just wondering if there is a way to even out the heat in a wood fired side box smoker any help would be great

Hi Walleyebob,

Without seeing the inside of your smoker, my best guess would be to build a sheet metal baffle on the inside of your smoker, below the grate, adjacent to the fire box.  The idea is to direct some of the heat to the far side of your smoke chamber.  The baffle could even be made out of an aluminum roasting pan.

Good luck,

..,Scott is right... we need pics.....  The smoker needs to be sealed, no air leaks....  Some folks have added a vent above the fire grate to increase air flow thru the smoker without adding air to the fire....  plates under the cooking grate to "move" heat....  Many mods can be done depending on type/design of the smoker....
