Spare ribs cooked in two stages..... - need some input.

I have some friends coming to town this weekend and would really like for them to try some spares.  However, the weekend is pretty busy and there isn't enough time to do a full on smoke.

So I am wondering.....using the 3-2-1 for spare ribs could I do the 3 hours of smoke...say thursday night....and then cool.  Then on saturday or sunday finish the 2-1 in the oven or something?  Will the ribs turn out or not so much???

I would do the 3-2-1 completely  then let them cool down some, spritz with apple juice and wrap good in foil and refrigerate, then when you need them put the foiled ribs in 350 oven 30 mins or so.
