doing up some spares and started with two very nice 6lb slab of ribs, just before going into the smoker....

did the 3 hour on the smoke using sassafrass woods for smoke flavor and just before foiling....
now just waiting on the next 2 hours till i un-foil them and back in the smoker....went light on the rub and added some different herbs this time....salt, pepper, paprika, onion powder, garlic power and oregano as the normal rub junk....then i added tarragon, rose mary, basil and thyme topped by brown sugar an hour before going in smoker....that is where i'm at now, will post back when done........bob
