Well Friday we did our second smoked prime rib. When we got it home we realized that it wasn't going to fit in the smoker so we had to cut it in half. While this worked out well for the smoker, I did not take into consideration the time for 2 smaller pieces. It was a little more done than I wanted, but still tasted fantastic and was a big hit.
Here is before the smoker with my "wet" rub of black peppercorns, and some additional spices with olive oil. I call it my meat paste
And out of the smoker
And cut up with my twice baked potatoes and my special yummy brussel sprouts in the background, I have yet to have anyone who doesn't eat the crap out of this BS recipe
And a dining room of happy eaters, never mind my bald friend, he's a bit odd
And for dessert
So now I had one to rare, and one a little to done so I'm thinking the next one will be just right!
We took the last couple pieces and the bones and made soup out of it. Threw in some potatoes, peppers, onions, carrots, celery and rice. Quite a tasty soup!
