We had a football party a few weeks ago, so, of course, I had to fire up the Smoke Vault! Bought some pork ribs, trimmed the skirt and removed the membrane. Rubbed with a recipe I found online and let them sit overnight. Used the 3-2-1 method, hickory and apple chips. Toward the end of the ribs cooking time, I also whipped up some ABTs. Jalapenos stuffed with cream cheese mixed with shredded cheese, a little garlic and pepper, a Little Smoky sausage and wrapped in bacon. Left them in for an hour or so, also with hickory and apple. In my little electric smoker I had a beer can chicken smoking. Forgot to take pictures of the bird! Anyway, big hits all the way around! Smoking is always better when you have good friends to share it with!!
